Black Bean and Corn Salsa
Black Bean & Corn Salsa |
One can of Black Beans rinsed & drained
One can of whole kernel corn drained
One each red & green bell pepper
One purple onion ( I used half of one)
Fresh Cilantro (Tops only, chopped)
Cumin (about 1tsp)
Tiger Sauce (Green bottle-Used half bottle)
Salt (if desired)
::Directions::
Drain and rinse black beans and pour into large glass bowl, then add rinsed whole kernel corn, chop up one red bell pepper and one green bell pepper into small bite size pieces and half of a purple onion, you can use the whole onion if you like more, then cut the tops off of fresh cilantro and chop up, add all together in large glass bowl and toss well, then add cumin and half of a bottle of Tiger sauce. Toss well, add salt if desired.
Refrigerate in a sealed container for at least 2 hours or over night for best results.
::This is great served with Beef Tacos, Burritos,
Fish Tacos or just with chips::
Also, if you like it hotter, you can dice up a couple Jalapenos and add to the mixture as well, Seeds and all if you like it really hot or remove the seeds (with gloved hands) if you prefer it to be less hot!
Avacado Salsa
2-Ripe Avocados
3- Green whole green onions with blades
1- Small Ripe Tomato
1- Green Bell Pepper
1- bunch of Cilantro
2- Limes
Salt to taste
Tostidos (or whatever brand chips you like)
Peel & remove seed from avocados, cut into cubes, chop the tomatoes, onions and bell peppers and Cilantro into small bite size pieces, squeeze the limes *all but two wedges over the mixture, add salt to taste.
Toss well and serve with Tostidos!
* I keep two lime wedges to serve on the side, covered in salt to enjoy with a good cold brew while eating this. This is optional :)
